You will likely be tearing down the vast majority of any sorters you have (excluding various little auto-smelters or autobrewers, etc). Once Ender Storage is released, we'll be dropping the hopper maximum on towns from 2000 to (likely) 500. This is because there just aren't many reasons to have hoppers for any kind of big storage once this system is out.
Ender Storage works by letting you define single-trapped chests in town as input chests (where you can dump items to be stored). Any ES Input chest, upon closing, will automatically store all valid items. They'll be removed from the chests's inventory and play a sound if storage occurs. Valid items are defined as non-special (not soulbound, lored, custom, etc). You can make as many of these as you'd like. Additionally, you'll be able to feed into ES Input Chests with hoppers if you want, meaning your autobrewer could all filter into one input chest so that you can pull from potion output chests wherever you place them (war rooms, usually).
For getting things out of Ender Storage, you will define one regular, single-chest per item (like a current sorter) as also defined by an item frame. Opening this chest will show you the entire storage you have of the item which you can then freely pull from. So you can only have one chest you can get Dirt out of, for example.
