Suggestion Wasted Potential on Golden Apples

Of course it would have to be balanced in some way, but I believe it would be nicer not just relying on potions.
the issue of older towns that have accrued more wealth being able to stomp any newcomers
You could say the same for potions, weapons, armour, tools, and everything else. Crafting golden apples would be a interesting alternative to brewing lots of potions.
Since the golden apples take longer to consume than splash potions, but would give multiple effects, I think they are balanced.
Also, to encourage gapples not to be used with potions (because that would be too op) They could be unstackable, or have limited stack size. Of course, if someone wanted all the properties possible from crafting them, they would have to fill their inventory with different (unstackable) gapples.

Also say you're in a fight out of potions, shulkers, and waiting for that next warp to bring potions you could use golden apples to survive until then. I do like the idea to not use them with potions/chug them and having them unstackable like blood/milk, but another idea is to add a cooldown on them.

Crazy thought I just had, could work or could not work in the slightest but what if golden apples didn't give buffs but they had the ability to confuse golems, consuming a golden apple will stop an iron golem targetting you for _ seconds, defense up from golem hits for _ seconds, no golem knockback for _ seconds, many different options. I use golems as the examples just cause it'd work for both attackers and defenders but it could even do stuff like confuse modules on a tgen, half damage from the bomb inside the core, it'd have a very drastic cooldown, maybe even 1 or 2minutes and you'd have to time it just right to be able to get the extra charge off without a golem disturbing you. It wouldn't be invincible since a player could come over and screw your day. The item likely also wouldn't stack, this is a way of adding something new and fun but completely different to potions and that huge cooldown would make it so it's taking slots but you really gotta know when and how to use it

I mentioned something like this in the OP:
"- Prevent golem aggro for 5 seconds (no doubt would require a cooldown)"
and I think it could be an interesting idea especially with the upcoming shield nerf in combat that'll eventually come.
